Homemade Maple Strawberry Cheesecake Ice Cream in 20 Minutes!

It’s ice cream season friends! I don’t even *like* ice cream all that much tbh but we’ve been enjoying ice cream cones and homemade banana splits all summer long! Something about a really hot day and hanging out in the backyard with the kids that makes cold treats taste so much better plus I got a fun new attachment for my KitchenAid to try out! Ice cream in 20 minutes!

The kids and I decided to be crafty and make some of our own yesterday after my KitchenAid ice cream attachment arrived (we just had to try it out asap) and omg, it’s amazing. It’s an absolute 10/10 and even better… it’s ready in 20 minutes! It’s super easy to make and you can customize it any which way you like! We decided to make a cheesecake ice cream and I’ll share a printable recipe below for you too!

Time for homemade ice cream!

I took my ice cream attachment and popped it in the freezer overnight (it needs around 15 hours to get nice and frozen to make the ice cream). Then in a big mixing bowl, combine the sugar and cream and whisk until sugar is dissolved.

Pour into the ice cream attachment and start mixing. Spoon in the strawberry maple mixture and graham crackers and keep mixing until the desired ice cream texture. It takes about 20 minutes, then you will have fresh homemade ice cream! Scoop into cones and oh my word you have the perfect summer treat. The kids were obsessssssed and were singing my praises all afternoon #funmomvibes

 

** For anyone wondering, my KitchenAid mixer is the colour Almond Cream and it’s the perfect creamy white colour

Some other really delicious mix-in ideas are:

  • peanuts and caramel
  • any sort of candy bar chopped up
  • grape jelly and peanut butter
  • chocolate syrup and skor bar pieces
  • frozen blue berries with a sprinkle of maldor sea salt
  • brownie chunks and caramel
  • ready to eat raw cookie dough chunks

Maple Strawberry Cheesecake Ice Cream

Ingredients

  • 1 cup sugar
  • 1 cup cream
  • 1/2 brick cream cheese diced
  • 3/4 cup frozen strawberries thawed
  • 1 cup graham crackers crushed
  • 2 tbsp maple syrup
  • dash sea salt

Instructions

  • Whisk sugar and cream together until sugar dissolves.
  • Drizzle maple syrup over strawberries.
  • Pour sugar/cream mixture into the frozen ice cream attachment and start mixing. Spoon in strawberries, diced cream cheese and graham crackers. Sprinkle in sea salt.
  • Let ice cream churn until desired texture.
  • Pour into a bowl and freeze, or scoop into cones and enjoy!
