Delicious 30 Minute Ground Beef Stroganoff

I made this for dinner yesterday and couldn’t believe how tasty it turned out! I also pulled this together in about 25 minutes so that alone made it a keeper! It’s essentially the lazy man’s beef stroganoff lol – super easy, no fuss and hearty af. I served this with some cucumber coins for the kiddos and a big salad for me (Kiel was working so he missed out but I’m definitely making this when he’s home as well!)

30 Minute Beef Stroganoff

Ingredients:

  • 1 garlic clove, minced
  • salt and pepper
  • 1 tsp onion powder

Instructions:

  1. Cook egg noodles according to package.
  2. In a large skillet, cook ground beef until no pink remains. Remove ground beef to a plate and drain the excess grease from pan.
  3. Put pan back on stove over medium heat (don’t add the ground beef back in yet) and add butter.
  4. Whisk in flour and let it cook for 30 seconds or so.
  5. Add beef broth and whisk vigorously to remove any lumps and bring to a boil, thicken slightly.
  6. Reduce temperature and whisk in sour cream and cream of mushroom soup and onion powder until it’s mixed thoroughly.
  7. Add salt & pepper to taste.
  8. If stroganoff mixture gets too thick, add a little more broth.
  9. Add ground beef back to mixture until reheated. Serve over egg noodles.
    * You could also serve this over mashed potatoes with a side of green beans. If you didn’t have egg noodles, any type of broad noodle would work (something with surface area or crevices to soak up the delicious sauce!)

Don’t mind my horrific photo of this dish LOL, I had literally just made this and after I shared it on Instagram, so many of you requested the recipe I had to snap a quick pic. So zero natural lighting or props, just a normal everyday plated meal snapped at dinner time haha. Yes, I added some sliced green onions for #pizzazz, did it work? LOL
