The other day I decided to bake some festive Halloween sugar cookies with the kids. Kiel’s away working and I like to do fun little things with them since the days solo parenting can feel a little long. Sugar cookies are always a favourite and so easy to tie into every season. I have this vintage pumpkin cookie cutter that was perfect to use. I’m pretty sure its from my childhood lol. This dough is awesome for cut out cookies! It holds its shape perfectly when baking – even the little faces baked perfectly! The centers are soft and the edges are nice and crisp. So good. It’s easy to make, but needs about an hour to chill so plan accordingly.
A few notes about prepping and rolling out the dough:
This sugar cookie dough easily comes apart when rolling it out and making the cookie cut outs. The cookie cutter I used is an old, old one from when I was little so it’s not the best and that may be why the dough stuck to it a bit?
I rolled this out on parchment paper which cut down on the amount of flouring I needed to do. Make sure to sprinkle some on your rolling pin to prevent the dough from sticking thought!
Lastly, I use icing sugar to sprinkle out instead of flour. It doesn’t dry out the cookies or take away from the flavour like flour can.
The BEST Sugar Cookies
Ingredients
- 1 cup Butter softened
- 1 cup sugar
- 1½ tsp vanilla
- 1 egg
- 3 cups flour
- 1½ tsp baking powder
- ¼ tsp salt
Instructions
- In a mixer, cream butter and sugar together until light and fluffy.
- Add vanilla and egg, beating well after each addition.
- Add flour, baking powder and salt to the dough mixture and mix well.
- Shape dough into a disk and wrap with plastic wrap. Chill for at least an hour.
- Bake at 375° for 5-8 minutes. I baked mine for 7 minutes. Watch them carefully and take out before the edges brown.
I made a simple royal icing, adding in some orange food colouring for the pumpkins. My kids are little so we keep it suuuper simple and I let them blob it on however they want. That’s the fun right! I snagged 4 cookies for myself to decorate and made these cute ombre orange pumpkins. The cookie flavour is deliciousssss and I like to keep mine ever so slightly underbaked so they’re soft and pull apart just so. I don’t love a crunchy cookie.
