YUM. You guys, I’m obsessed with these little powerhouse bites. First of all, they taste like delicious brownie batter, plus they are so easy to make & a healthy protein treat. My recipe makes 8-10, depending on the size of your brownie bites, but feel free to double it because #treatyoself! Trust me, these will be gobbled up!
(No Bake) Healthy Protein Brownie Bites
Ingredients:
1/4 cup quick cooking oats
1/4 cup chocolate protein powder (I used Garden of Life)
2-3 TB smooth peanut butter
1 TB cocoa powder
1-2 medjool dates
2 TB cold coffee
pinch of pink sea salt
2 TB mini chocolate chips
Directions:
Put everything except the chocolate chips into a food processor (start with 2 TB of peanut butter and 1 date, if it needs more ‘stick’, add another tablespoon of peanut butter and if it needs to be sweeter, add another date). Mix well and after 30 seconds, scrape down the sides. The mixture should start to come together. Add chocolate chips and pulse a few times. Roll into small balls and chill for 3o minutes. Eat chilled or at room temperature.
